Mary submitted: Soups & Salads Recipe

This may be what you are looking for on the "Dixie Stampede" soup. It is a creamy vegetable soup. Mary 4 servings 1 TB butter 1 lg. carrot, peeled & sliced thin 1 small yellow onion, sliced thin 1 lg. potato, peeled & sliced thin 2 cloves garlic, crushed 1 bay leaf 1/8 tsp. pepper 1/2 tsp. dried thyme, crushed 2 1/2 cups low sodium chicken broth 2 cups skim milk 1/8 tsp. Salt 1. In a medium-sized saucepan, melt the butter over low heat. Add the carrot, onion, potato, garlic, bay leaf and thyme. Toss vegetables to coat well with butter, then stir in 1/2 cup of the chicken broth. Cover and cook for 15 minutes or until most of liquid has evaporated. 2. Raise the heat to moderate, stir in the rest of the broth and add the milk. Cook uncovered, stirring occasionally, until the vegetables are very tender and all the flavors have blended. (About 30-40 minutes). 3. Cool the mixture slightly and drain, reserving both the vegetables and the liquid. Discard the bay leaf. Place the drained vegetables and 1 cup of the broth in a food processor or electric blender. Puree for 1 minute. Return the puree and the reserved liquid into the saucepan and add the salt and pepper. Over medium heat, warm to a moderate temperature and then serve.

jtmg, The following chart was copied from www.sweetnlow.com. In recipes for sweetened sauces and beverages, all the sugar can be replaced with an equivalent amount of Sweet'N Low. Recipes for most baked goods require some sugar for proper volume and texture. For best results, experiment by substituting half the sugar in a recipe with the equivalent amount of Sweet'N Low, as shown in this chart. Sweet'N Low Substitution Chart PACKETS BULK LIQUID 1/4 cup granulated sugar 6 packets 2 teaspoon 1 1/2 teaspoons 1/3 cup granulated sugar 8 packets 2 1/2 teaspoons 2 teaspoons 1/2 cup granulated sugar 12 packets 4 teaspoons 1 tablespoon 1 cup granulated sugar 24 packets 8 teaspoons 2 tablespoons This is an "old-fashioned" recipe. NOTE: If you use "self-rising" flour, omit the baking powder. GRANDMA'S FAVORITE PANCAKES 1-1/4 cups flour 1 tablespoon baking powder 1 tablespoon sugar 1/2 teaspoon salt 1 beaten egg 1 cup milk 2 tablespoons melted shortening, oil or bacon fat Sift dry ingredients together in a bowl. Combine egg, milk and shortening together. Beat a little to mix. Make a well in the dry ingredients and add milk, shortening and milk, stirring just until flour is moistened. Batter will be lumpy. Bake on greased griddle. Turn when top is bubbly. Makes 6 to 8 cakes. Use a Hot griddle (375-400 ). This recipe was discovered at www.grannyskitchen.com.
